I love fall. The crisp air, changing leaves, and squash is in season!! I could devote an entire blog for my love of squash and all the recipes I can make with it! I will share only those recipes worthy of sharing, and this one is worthy of sharing....Pumpkin White Chocolate Chip Cookies. It is a cake-like cookie that is sure to please any pumpkin lover.
Here is what you need:
1/2 cup shortening
1/2 cup butter
1 cup brown sugar
1 egg
1 tsp vanilla extract
1 cup pumpkin (I like to use fresh, but had some canned pumpkin on hand so I used that)
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/4 tsp ground ginger
1/2 tsp nutmeg
1-2 cups white chocolate chips
Mix the dry ingredients together.
Cream the brown sugar, butter, and shortening.
Add the pumpkin, then egg, then vanilla.
Slowly add the dry ingredients.
Add the white chocolate chips.
Bake at 350 for 12-15 minutes. I also like to add cinnamon and sugar on top of the cookies before I bake them. Make sure you get one fresh out of the oven for yourself because they will be gone before you finish the entire batch!
